Bengali style Bhendi Bhaja (Crispy Okra stir fry)

Okra is a special kind of veggie that devours by everyone even in my family. My munchkin also likes this green veggie. Well, this recipe is completely inspired by Bengali cuisine.

This beautiful crunchy, luscious side dish called Bhendi Bhaja. Very popular in the eastern state of India. I am very fortunate that I have friends from different states of India and they introduced me to different flavours of Indian cuisine and culture. This is one of them.

The sharpness of mustard oil, tempering with nigella seeds and crusty coating of peanuts makes this beautiful okra more desirable and delicious. Well, I like my okra crispy and crunchy. Peanuts give the crunchy texture to this stir fry side dish.

Serve this very beautiful Bengali style crusty and crispy bhendi bhaja with hot steaming rice and dal or you can serve with Rotis as well. Keep enjoying good food. Till then Stay Healthy Stay Humble.

Ingredients

 200 g Okra (Bhendi)
 1 tbsp Mustard oil
 ½ tbsp Nigella seeds (Kalonji seeds)
 ¼ cup Peanuts
 1 ½ qts Green chillies
 ½ tbsp Turmeric powder
 ¼ tbsp Red chili powder
 Salt as per taste

Instructions

Dry roast the peanuts and make a coarse powder.

Wash the okra and green chilies and pat dry it using a clean towel make sure okra dry completely then slice in half lengthwise.

Pour the mustard oil on to a heavy bottom pan on medium heat.

Once the oil heats up temper it with nigella seeds (kalonji seeds) and lets it sizzle for few second then.

Add okra, green chilies, turmeric, and salt give it a toss and cover the pan and cook for 10 min but gently toss in between.

When okra is almost done, add the peanuts crumbs and red chili and toss it again to coat the okra slices and cook for 5 min.

Check the seasoning if required add more. And, serve hot with rice or rotis.
