Kaju katli (cashew fudge). Kaju katli is a mixture of cashew, sugar, ghee, saffron. Generally, single thread sugar syrup used for this recipe. But this one is without sugar syrup, a bit different from the traditional recipe.

Perfect for a sweet gift for any occasion. The celebration is incomplete without this special sweet. Actually I am in love with this sweet so I want to share this with you guys. As you know "you are what you eat", so I prefer something sweet in my meal.

Ingredients

 1 cup Cashew powder
 ¾ cup Sugar
 3 tbsp Ghee
 A couple of saffron thread (soaked in milk)
 1 tbsp Rose or Kewra water (optional)
 2 tbsp Water

Instructions

Heat the ghee in a pan on low flame.

Add sugar and cashew powder, mix and roast on low flame 2-3 min.

Then add saffron soaked milk, water, and rose water, mix well and stir continuously on low medium flame.

Cook till all water evaporated and mixture leaves sticking of the pan bottom. (not too hard)

Grease the tray or thali, pour the thick batter in it and spread lightly with using a spatula, let it lil cool down than cut into a diamond shape.

Garnish as per your choice like silver vark (edible silver foil).
