Vegan Coconut Ladoo

Perfect coconut ladoos meant soft, delicate coconut snowballs for me that’s exactly I define my one of favourite ladoos. Like other ladoos, coconut ladoo is a famous sweet in India for the festivity or gathering. It is not a special occasion or any festive today; I don’t need any special reason for enjoying these sumptuous ladoos.

Coconut ladoos are made using very few ingredients like desiccated coconut, coconut milk and sugar. Even these ladoos are so delicious but if you want to add cardamom powder or lemon zest, saffron, rose water; you can add nuts as well as per your liking.

I like fresh coconut flavour in these coconut ladoos. I always use fresh coconut for this recipe, that actually gives the tender, rich coconut flavour to this sweet but you can use dry coconut as well.

If you are using fresh coconut, then dry roast it for 5 min over a low flame to remove moisture just make sure not to brown. Continuously stir while roasting then adds coconut milk or any other whole milk of your choice. Maintain low flame while cooking.

Green Onion Fritters

Delicious and finger-licking snacks for Sunday evening. Also known as pyaz ke pakore… for a lazy beautiful sunny day but tastes absolutely amazing and crispy in texture. These crispy and delicious fritters are undetectable Indian snack made with spring onion, gram flour, rice flour, and few spices. A perfect tea-time snack for tea parties and even great for a movie night.

During monsoon, it is most favoured in Indian families. You can find many street vendors also selling them along with a hot cup of masala tea or some special Indian dips and chutneys. These deep-fried yummlicious fritters are total bliss, you can even use other vegetables in this batter such as potato, cauliflower, baby corn or any vegetable of your choice instead of spring onions also goes always good.

Curry is a special part of Indian cuisine and families. A very famous rajwadi style curry simmers in rich cashew and onion-garlic gravy with whole spices that served with hot pooris or parathas.

You always choose your favourite vegetable in this type of curry – the base is gravy and voila. Even you can prep this gravy in advanced so when you need to add vegetable and spices just heat it up and serve. Authentic food has its own flavour and charm that is impossible to resist. This vegan spiced walnut banana bread is simply delicious with a beautiful texture that makes banana bread irresistible. Actually, I love lots of walnut in my banana bread that gives not only the chunky texture but also beautiful colour. It’s so amazing… I am really in love with this vegan spiced walnut banana bread. I am not the person who grew up eating lots of cake and flavoured bread but after moved to Pune with my family then the first time I have tested banana bread from a little bakery near my house. It was the most amazing banana walnut bread I ever tasted.

That time I thought I will never be going to be able to make this kind of sweet bread at home. I was never able to stop myself from eating good banana bread. After trying so many recipes, this is exactly the same taste and textured walnut banana bread I was used to eating in Pune.

This is my version of easy one bowl spiced walnut banana bread. Moist, spiced and filled with nutty walnut, this banana bread is so amazing and melts in the mouth. I made this bread without dairy and eggs but you will not able to tell the difference. It is so easy to make, even you can make this beautiful bread without sugar by trying your favourite sweetener or if your banana is sweeter then you don’t need any sugar.

Always use overripe bananas for baking for texture and sweetness. You can skip jaggery also or replace walnut with chocolate chip or any other nuts of choice. It’s totally up to you guys but, trying healthy vegan spiced walnut bread is worthy. Plus you can have little dessert without any guilt and your little one also going to love this. Eat as a snack or enjoy a slice of this healthy banana bread as a breakfast with your favourite hot beverage or as a dessert after your meal. It’s so good to have a healthy dessert for your guest also.

Spicy Vegan Baked Masala Peanuts

Masala peanut is a spicy and crunchy fried peanut coated with gluten-free chickpea flour and spices. That is usually served with a hot cup of tea or enjoy with your favourite drink during drink parties. I have savoury snacking additions but I prefer something healthy and non-fried with my tea. Well, tea is an important part of Indian evening and for me as well. My day starts with my masala tea and any spicy dry snacks. So, this is my baked version of this classic Haldiram style masala peanuts.

It is healthy, very less oil, gluten-free and super easy to make at home and you can be store for a long time in your kitchen counter in an airtight container. Your kids can also enjoy this guilt-free healthy version of masala peanut. This baked masala peanut is a perfect party starter also and the best part is, it can be prepared in advanced and stored easily.

Making favourite snacks at home is my habit and outcome is so delicious better than store brought. At least I have control over the quality of ingredients and spices without the use of preservatives. The best thing about this non-fried version of masala peanut you can make at home with basic pantry staple ingredients. So, enjoy… one of my most favourite all-time snack but healthy version 🙂

Vegan Scallion Pancakes

This restaurant-style classic savoury vegan scallion pancakes you can make it home easily. These thin, round savoury pancakes are crispy outside and chewy inside. Scallion or green onion pancakes are famous Chinese street food that usually eaten in breakfast or as a snack. Green onion pancakes are a savoury Chinese flatbread simply made with flour, water, salt, and chopped scallions.

My version is crispy & flaky outside and chewy inside. Somewhat a messy thing to make, but totally irresistible to eat. The unleavened dough is shallow fried to a golden crisp and served hot with vinegar-based dipping sauce. Scallion pancakes are quite similar to the Indian paratha or Indian flaky flatbread but totally different filling and crispiness. These three-ingredient vegan scallion pancakes are incredibly delicious and easy to make at home. This beautiful vegan, gluten-free, sugar-free cherry chia crumble is my lovely summer treat, a combination of cherry and almond is absolutely amazing. I made this sugar-free tart for my cherry lover munchkin and hubby on the father’s day. Absolutely delicious crust is made with almond flour, coconut oil, gluten-free flour with a touch of almond extract and slightly sweetened with pure maple syrup. An impressively crusty tart filled with beautiful fruity cherry and chia filling, delicious yet beautiful dessert for any occasion.

Utterly delicious, fruity filling, beautiful almond crumble on top, gluten-free and the best part it is vegan with refined sugar-free. So, you can have a slice of this elegant and delicious almond cherry tart without hesitation in your brunch.

I simply love the flavours of summer, not heat waves. Fresh berries, lots of peaches, mangoes, going to the farmers market and buying all these my favourite fruits and veggies… This is how I want to spend my summer.

It feels like heaven when your kitchen smells with the fruity aroma. Well, when the tart comes out of the oven, lets it cool down for a bit then slice it up. Serve it warm with a big scoop of creamy vanilla ice cream.

Dal Palak (lentils spinach curry)

Indian dal Palak or yellow lentils with spinach is a pretty basic recipe that doesn’t require a lot of ingredients and spices. For Dal Palak, I have used yellow lentils and split chickpea with spinach but feel free to swap with split pigeon peas as per your taste. I like the creaminess of moong dal with a little chunk of Chana dal. This dal Palak is full of nutrition and protein-packed with the goodness of spinach north Indian dish that is very famous and healthy. It gives your diet a healthy balance of deliciousness and protein.

Actually, this is a simple way to add greens in your daily meal. An easy to make a recipe with a unique garlicky flavour that gives this recipe much flavour and aroma. This Dal Palak is not just comforting meal but also has an amazing aroma of garlic and very few spices that easily available in your pantry. My version of dal palak is simply cooked moong dal, Chana dal with turmeric, salt in garlic-cumin tempering and few spices that gives an aromatic lift. It’s not so fancy yet so delicious and with the goodness of humble lentils and green spinach.

In your meal, nothing more succulent than a warm bowl of dal palak poured over hot plain rice or with chapati. In India, every region they have their own varieties of lentils with different spices and veggies. Also different cooking method, worth of trying but I like most this very simple dal palak in my dinner. So simple, sober, much comforting plus vegan full of healthy nutritional values and plant-based protein is a great way to add green in your daily meal.

Thepla is a most popular Indian flatbread from Gujarati cuisine. Thepla is cooked almost daily in many Gujarati homes. Today, I am going to share my mum’s style spinach Thepla that is delicious, healthy and easy to make. My mother used to make this thepla at home either with methi or Palak to feed us green somehow. In past, I was never a big fan of green.

If you are going on long travel then it is the best travelling food, easy to carry, easy to store and you can eat it for the next 2-3 days easily. It is prepared from wheat flour, fenugreek or palak (spinach) leaves and other spices. Thepla is a light as well as a healthy snack. It is a thin, soft and merely goes great with boondi raita, pickle. Even this is the best option for the kid’s lunch box. This way you can serve them green leafy vegetable with whole wheat flour. It’s a perfect nutritional power pack for your kids.

Thepla is a perfect blend of spicy and savoury. It derives distinctive taste from fenugreek or spinach leaves. Green leafy veggie has a bitter taste that makes them unpalatable, but when mixed into the dough or with some spices makes a delightful aroma and texture. Growing up in India, we were fortunate enough to have a different kind of food experiences with great varieties. We grew up eating the numerous types of curry and flatbreads and thepla is on the top of my food list.

These are great for breakfast, lunch or even dinner. You can pair them with yoghurt, chutney, achaar (pickle) or yoghurt. These are nutritious, delicious and addictive too!

These nutritious flatbread are one of the best ways of feeding veggies to fussy kids as the veggies are finely chopped and kneaded with the dough. Other ingredients that make the thepla soft is curd and spices always gives a nice flavour.
