Sabudana Vada (Tapioca Pearl Fritters)

In these crazy times, we keep doing what we do best is making delicious food and pray. Well, during the Navaratri when you are not eating onion and garlic but still need some nice snack recipe that is easy as well.

Have you tried tapioca pearl fritters aka Sabudana vadas? These fritters are crispy and crunchy in texture, with a spicy and slightly sweet flavour. It’s pantry friendly, comforting snack for me. I love to make these simple and fancy snacks. Serve as an appetizer at a party or breakfast or as an evening snack. You will surely be lost into its crunchy texture.

Sabudana Vada (tapioca pearl fritters) is a popular snack in India especially during the fasting days like Navratri. These shallow fried  Sabudana Vada’s are crunchy on the outside and soft texture creates a lot of flavours inside.

It’s a very easy and no time Snack recipe with minimal ingredients and amazing flavour. This Sabudana vada is made of three main ingredients socked  Sabudana (tapioca pearls), boiled potatoes and roasted ground peanuts along with cumin, salt, green chilies, and lemon juice, mixed together to shape into patties or balls and then do shallow fry.

This most delighted snack is from the Maharashtra region but popular all over India too. Crispy and crunchy Sabudana Vada is perfect for tea time snack. These shallow fried vadas (fritters) are very addictive, vegan, gluten-free.

A healthy breakfast recipe for the dark chocolate lovers – granola with raspberries and dark chocolate. Make a huge batch and enjoy healthy chocolaty breakfast all week! When it comes to chocolate, I love my dark. Dark and rich-full of intense flavours Perfectly paired with raspberry. Actually, raspberry and dark chocolate is a superb combination for homemade fresh baked granola.

It’s perfect with milk, yogurt or straight out of the jar as a snack. It is vegan, gluten-free granola is amazing and the most amazing thing is that this recipe is refined sugar-free as well. Loaded with mix seeds healthy rolled oats, naturally, sweeten of maple syrup, nutty crunchiness of almond or any other nuts of your choice, sprinkled sea salt, flaky coconut with the goodness of cacao powder, top up with some freeze-dried raspberry, and intense dark chocolate chunk. In every bite amazing flavour and texture.

Well, homemade granola is my quick snack for all time and healthier than granola bought from a grocery store. Homemade granola is a perfect breakfast when you don’t have time to make breakfast in the morning or busy with a kid.

Baileys Thandai (spiced milk with Baileys)

We all are at home and it’s a good time to try out a simple and good recipe. Let’s plan to make a beautiful special drink – Baileys infused Thandai.

Thandai is a chilled, gorgeously Indian spiced drink made from whole milk, dry fruits, flavored with saffron, cardamom, fennel seeds, poppy seed, slight heat of peppercorns, the fragrance of roses. It is like nothing you have ever tasted before.

And it is a nutritious and cooling drink that tastes is absolutely heavenly. Traditionally thandai drink is spiked with bhang to serve on special occasions like Holi, Maha Shivaratri.

But it tastes delicious with baileys as well. My version of this creamy and flavourful Thandai spiked with Baileys Irish cream is utterly delicious. When you blend two amazing drinks together then the fusion is awesome. If you have this Thandai spice mix powder ready then this special drink you can make in no time. You need Baileys handy but it’s totally optional.

Well, Baileys is an indulgent blend of cream and aged Irish whiskey and infused with vanilla pods and cocoa beans for an irresistible taste. So, enjoy a glass full of indulgence, that can be clubbed with your favorite food, nice books, Netflix movies.

We should be prepared and don’t get panic in this kind of situation. Need to think about other people’s life and safety.

Hello, foodies fellow how are you all? Looking for a healthy start for your day? What about crunchy breakfast treat with homemade cranberry granola, is ultimate. A simple and healthy way to start a new day with soulful breakfast.

This cranberry granola is completely vegan and healthy (no sugar) sweetened with pure maple syrup and spiced up with cinnamon. My granola loving family eats it straight out of the jar but I like to sprinkle granola over my fruit yogurt. Actually, this is a favourite way to eat your breakfast without skip, in less time you can eat with milk as well.

Making granola at home is easy but hard to believe to be without adding refined sugar in your important meal of the day. A healthy, vegan, delicious, crunchy granola that we eat daily, and you could too. So guys, don’t skip breakfast.

Stunning Beet Hummus

Hummus is a Mediterranean savoury dip. It’s packed with fibre, vitamins, and minerals and can be flavoured in with different veggies. Although, I am not a big fan of beets. But, the great thing about beets is that when they are roasted, they have a slight sweetness, mild, and earthly flavour that I can eat.

You need to use cooked beets for this recipe. To speed the process, instead of cooking them yourself, you can buy cooked beets also that are vacuum-packed. Classic hummus is so good and delicious in taste. But, when you add root veggies like carrots, beets, hummus surely becomes more appetizing delicious.

Beet is a good source of fibre, Vitamin C and antioxidants that may help lower blood pressure and reduce inflammation and of course, its slightly sweet taste makes hummus more delicious. Vibrant pink colour with a hint of sweetness, oh! my goodness.

This beet hummus recipe is very easy to make if you have roasted beetroots. Roasting beetroot is the only time-consuming preparation.

Mild sweetness from the roasted beetroots and the creaminess from chickpeas, shiny olive oil, and tahini, makes it awesome! You can pair it with pita bread or pita chips or veggies as you like.

Roasted beets along with cooked chickpeas, garlic, pepper powder, lime juice, salt, tahini paste, olive oil and water (a little), blend them into hummus paste and serve.

Blood Orange Barfi (Fudge)

Yesterday, the first time I found these beautiful blood oranges in the market (this season). It made my day not just because it looks insanely beautiful but they are sweet with a hint of raspberry flavour and a bit of floral. The inside flesh is dark pink, maroon, or even dark blood red. Blood oranges grow on citrus trees in warm climates. The fruit can be eaten as is, juiced, or used in baked goods, cocktails, salads, or other dishes that call for oranges.

Along with their lovely red colour, blood oranges tend to have a noticeable and delicious raspberry edge to their flavor. Now it is a season of blood orange and I wanted to make something which really showed off their lovely flavor and beautiful colour.

I love adding them to my famous Nagpur orange barfi instead of regular oranges. My version of this beautiful barfi is so delicious and flavoursome. There are many variations of barfi in Indian cuisine.

This delightful sweet blood orange barfi (fudge) with the goodness of almond and ghee makes this version a more luxurious desert for Holi. There is no need of adding artificial colour in this beautiful dessert. Blood oranges gives a beautiful shine and colour in it.

It melts in your mouth on every single bite. Nagpur is famous for the Oranges and also known as the “Orange City” for a major trade centre for oranges that cultivated in the region. Nagpur is also famous for orange sweets and barfi.

This beautiful sweet needs constant attention and some muscle power to do constantly stir and cook the mixture for the right consistency. This one is an easy and delightful dessert for your sweet calling carving.

Bengali style Bhendi Bhaja (Crispy Okra stir fry)

Okra is a special kind of veggie that devours by everyone even in my family. My munchkin also likes this green veggie. Well, this recipe is completely inspired by Bengali cuisine.

This beautiful crunchy, luscious side dish called Bhendi Bhaja. Very popular in the eastern state of India. I am very fortunate that I have friends from different states of India and they introduced me to different flavours of Indian cuisine and culture. This is one of them.

The sharpness of mustard oil, tempering with nigella seeds and crusty coating of peanuts makes this beautiful okra more desirable and delicious. Well, I like my okra crispy and crunchy. Peanuts give the crunchy texture to this stir fry side dish.

Serve this very beautiful Bengali style crusty and crispy bhendi bhaja with hot steaming rice and dal or you can serve with Rotis as well. Keep enjoying good food. Till then Stay Healthy Stay Humble.

Jalebi (Indian funnel cake)

Hello foodie fellows! Well after carnival celebrations and now Holi is around the corner in a couple of days. The festive feeling has geared up and Holi is such a special colourful occasion that Indians communities are so proud to share colour and joys with people around the world.

Today, I am sharing the most luscious jalebis. This sweet’s originality comes from India but Jalebi is also popular in Pakistan, Bangladesh, and the middle east and even north Africa.

This time I thought to make this traditional crispy sweet that dunked in sugar syrup with rabri but mostly in my family this sweet served with rice pudding (kheer). This crispy golden swirled Jalebis is one of favourite sweet from Indian cuisine.

It is crunchy outside and juicy inside; rustic golden spirals fried pastry that make a centrepiece at any occasion or weekend or party. Yes, off course it is – Jalebi! Mostly people like it in breakfast or tea time sweet with samosa either fafda or it can be pair with rabri.

Jalebis should be served hot and crispy. Jalebis are one of my most favourite sweets of all time. These are classic, crispy, and crunchy dipped in saffron sugar syrup and will never disappoint you. It also brings lots of memories of home. In north India, you can easily find these Indian style spirals funnel cake dunked in sugar syrup at sweet shops and street vendors.

Traditionally, Jalebis are made after the batter is fermented for 6-8 hours. But there is another variation for this sweet that is instant. Instant means the fast process that can be completed within minutes, so it does not require overnight waiting time. But, mine is a traditional one.

Holi is incomplete without jalebis and weekends as well. Happy weekend.

Bottle gourd Split Chickpeas Curry (South Indian Style)

Hello! Foodie fellows. There are so many wonderful things that you can do and make with your vegetables. Some vegetables are so versatile and amazing. You like it or not but bottle gourd is one of them that can be a to-go recipe for this weekend.

Bottle gourd has always been regarded as one of the healthiest veggies. This is a very versatile veggie that has 92% water, minerals, and much more nutrients. Even in Ayurveda also describe its nutrients fact and benefits but unfortunately many are not fond of it. If you have experience with Indian cooking than you know this a part of your kitchen in different ways like curry, raita, sweet.

Well, I am sharing this recipe in a different flavour. So, you can enjoy this veggie without having any second thought. This curry is a very typical Indian but with Lil variations with split chickpeas and south Indian touch.

When I was in Bengaluru, my Telugu friend taught me this flavourful curry in authentic south Indian style. Lots of flavours burst in your mouth when you take a bite. You can pair this curry with rice or paratha. The best part is that this is no Huss-fuss recipe is made with the ingredients that you are sure to have at home.

This dudhi (bottle gourd) and Chana dal (split chickpeas) curry is rich in protein and folic acid yet most delicious and comfort wholesome curry. Of course, bottle gourd doesn’t have to mean boring, surely this curry going to make this versatile veggie more desirable. Eat your greens and be healthy, be humble.

Rose scented Raspberry Panna Cotta

Hello, foodie love birds, happy valentine’s day to all of you.

Well, this is a magical Friday night. If this doesn’t get you drooling for some sweet, creamy, aromatic luxuries dessert, I don’t know what will. For me, without dessert Friday is incomplete. This creamy rose and raspberry panna cotta made my day more beautiful.

The creaminess of this panna cotta creates contrasts beautifully with the crunch of raspberry and rosewater-scented raspberry sauce on top. Panna Cotta is from Italian, meaning simply ‘cooked cream’. This gorgeous Italian classic never fails to impress. It is a light dessert and with the addition of fruit makes a perfect romantic dessert in your dinner.

There are many variations of this simple dessert but in this one, I used pure rose extract, very beautiful raspberry with milk, cream, and sugar. This is a beautiful dessert for a romantic date night. If you are looking for easy to make yet elegant dessert then panna cotta is perfectly suited in that case. For this, you don’t require any special kitchen skills and do not need to spend hours in the kitchen. It can be prepared within 15-20 min. Once you prepare the panna cotta, it goes in the fridge to chill overnight. Prepare simple yet elegant rose and raspberry panna cotta, a day before valentine and surprise your special one with this.

It’s a delicious feeling to fall in love, and I feel this luxury in my life, not just once I also falling in love with my food as well.
