Jeera (Cumin) cookies

Today I am sharing freshly baked vegan cumin cookies. Not so fancy but, a basic thing that brightens my mood and my day. Little sweetness with cumin flavour having buttery texture just melts in the mouth, these beautiful yet delicious cookies.

These mildly sweet and salty cookies are packed with the fragrant earthy aroma of roasted cumin. We Indians love our chai and we need biscuits too, a perfect pair in family tea time. It doesn’t matter, it is morning or evening. Well who said cookies need to be sweet, you should try these roasted cumin savoury cookies. This very special savoury jeera (cumin) cookies are for those who don’t like sweet with their tea or coffee.

Well, my morning starts with a hot cup of my masala tea, some cookies, and retro songs on the radio on a rainy and a lazy morning! Nothing better than this, for the absolutely perfect morning… and my home filled with the aroma of these freshly baked roasted cumin cookies. Baking cookies in the morning is always a pleasure-full experience for me, no matter how upset I am.

These cookies are very easy to make. I make my cookies slightly thin rather than normal cumin cookie, my baby girl likes thin cookies. These cookies are required only a few pantry staple ingredients like flour, butter (I have used vegan butter), salt, little bit sugar, and yes, of course, star ingredient cumin. Not much fancy but just simple cookies from my heaven my kitchen.

Vada pav paratha

Vada pav is one of those comfort food, that just feels like home. Give me a big shout if you are a big Vada pav fan like me 🙂

Happy Monday sunshine guys, how are you all?

Vada pav is a most delicious best tea time snack and so so tempting. Grab a vada pav with a hot steaming hot cup of tea… voilà. Vada pav a famous street food of Mumbai and across Maharashtra. Every Mumbaikar is fond of this crispy, flavourful spicy everyday sandwich. A quick, filler, and power-boosting Vada pav with a steaming hot cup of chai, is all you need to start a busy and hectic day.

It’s basically fried potato mixture patties with little spices and coated into gram flour batter. It is served in between two slices of pav (Indian buns) and dry garlic chutney, and green chutney and fried green chilli.

But I gave this traditional street food a twist by making paratha of this. Actually, from the last few days, I had a strong urge to eat vada pav but I really don’t want to eat fried. so I fill my paratha with this filling and dry garlic chutney. The outcome is so satisfying and yummy. Your taste buds will enjoy this vada pav paratha. Take a bite of this very special Vada pav paratha and it feels like actual Mumbai style Vada pav.

This is a long recipe and requires some time for prep work. But trust me, one bite into this deliciousness and it’s worth of it!

Enjoy your vada pav paratha with dry garlic chutney, if you really want to enjoy the flavour of vada pav then spicy dry garlic chutney is necessary. Feel free to sprinkle a generous quantity of garlic chutney on top of paratha to enjoy. We thoroughly enjoyed these parathas with mildly tempered yoghurt and fried green chilli along with dry garlic chutney.

Such soulful meals make Sunday brunching more beautiful.

Palak Paneer – Spinach With Indian Cottage Cheese

Vegan Chocolate Cranberry Cookie Bar

Hello foodie fellows! I have completed my Monday vegan baking project and loved to see my daughter eating her food with these bars. Chocolate bars are one of my favourites. Yes, I love to have chocolate chip cookies as a sidekick with my morning tea or any time of day as sweet and my family as well. This simple and versatile chocolate recipe, you can make easily.

For the last two days, my munchkin was not eating anything so I came up with the idea to make these salty chocolate and cranberry cookie bars. These heavenly delicious cookies bar with dark chocolate and cranberry and she loved it. These cookies bar easy to make and incredibly delicious. Even you can freeze them for the future.

For these delicious cookies bars, you don’t need eggs or dairy products. But, still too yum. I have added 80% dark chocolate and dried cranberry. You can add any topping you like or sprinkles totally up to you, feel free to create your own style cookies bar.

I love dark chocolate and my munchkin too, so that’s why I prefer to add the finest dark Belgium chocolate and slightly tanginess of cranberry. These cookies bar easy to make, vegan dairy-free, chocolaty with crispy edges and perfectly delicious. At least, now she eating her food with this beautiful gooey chocolate cookies bar.

Well, you can freeze these bars and tastes delicious when thawed. Just wrap individual bars in foil properly, then put into the freezer-safe Ziploc bag. Whenever you want to eat, let them thaw unwrapped and enjoy.

Apple Curry

Apples are so versatile and I couldn’t stop featuring as in my curry love. This beautiful spicy, tangy, vegan curry packed with full of flavour and super comforting. Are you Apple fan? Well, I am not but this spicy apple curry is loaded with aromatic flavour and chunky texture that make perfect family dinner meal. You can’t say no to it.

My mum used to make fruits curry like guava curry, apple curry, banana peel curry, a very special potato curry that cooked in orange juice. So, it is my mum’s recipe. In Indian cuisine, we make curry with fruits and dry fruits too. The sweetness and tanginess of apple go so well with earthly spices and create sinfully warm and delicious curry.

This authentic apple curry is slightly sweet, spicy and tangy in the taste that usually served with warm roti or rice. This recipe uses only pantry ingredients. So, if you got some Indian spices at home and apples, good to go. It’s fun to make food gives you positive energy. Apple curry is healthy, plant-powered, vegan, easy to make and also packed with lots of earthy flavours.

Coconut Rice (Thengai Sadam)

Hello Foodie Fellows! This is one of my mouth-watering dishes; one of the most flavoured and easy to make a rice dish. Well, Friday cannot be better than this kind of meal. The key to this simple recipe is fresh coconut.

It is a Tamil Nadu special dish called Thengai Sadam (Coconut rice). Coconut Rice is popular in south India. With a simple tempering, freshly grated coconut, and curry leaves for most authentic flavour. This recipe made with very few ingredients and it works great if you have pre-boiled rice. Toasted coconut gives a nutty, light flavour and aroma to this special rice dish. Of course, it is a vegan-friendly and gluten-free meal.

This versatile south Indian coconut rice needs to have tempering aka tadka with mustard seeds, dried red chili, few lentils, and few more basic pantries staple ingredients with extra crunch from cashew. This special but easy south Indian style rice savoury lunch box recipe is full of the nutritious and easy peasy dish for busy weeknights. Nothing can beat the flavour and aroma of fresh coconut, but if you cannot find fresh coconut, frozen will work too.

It is one of the most common food in south India which made during special occasions as Prasadam. The amazing nutty flavour of the recipe will surely like your taste buds.

Drunken Dalgona

Hello guys, I hope you all are doing well and keeping yourself sane and safe. Are you enjoying a lockdown period?

खामोश सी सुबह में – मैं और तुम – एक कप कॉफी… Well, it is Easter and you have plenty of time to make fancy, yet easy food and drink. I have been seeing this coffee, whip all over the internet and my mind blown by the texture. The Dalgona coffee aka whipped coffee trend got me too. I am a bit late to this sensation, but here I go. Got my Easter started with drunken Dalgona.

Coffee makes everything better and this fluffy, creamy coffee is an addictive and nice thing, that happens in this duration. So finally, my turn to enjoy this coffee on my way, drunken way.

All you need is a tablespoon of each instant coffee, sugar, and water. Whisk them together until thick and fluffy. Within no time this coffee ready for you to enjoy. I just had to make it in different ways to enjoy on my Easter morning to saying goodbye to my old friend aka sugar.

Ya, I am leaving sugar forever but before leaving last drink with my sugar and of course Dalgona coffee. Easter morning everybody making delicious food and barbeque, while I am making my last coffee to welcome beautiful spring and sugar-free, healthy life.

Matar Paneer (Dhaba style)

Hello foodie fellows! Matar Paneer is one of the most popular Indian curries. Paneer (Indian cottage cheese) and Matar (green peas) are simmered together in luscious creamy gravy, which creates a magical rich flavour. This smooth silky fine gravy of Indian cottage cheese and peas indeed is a delightful flavour to burst in your taste buds.
 
Matar Paneer is a delicious North Indian curry recipe and my all-time favourite. It is an extremely popular restaurant-style Matar paneer recipe using paneer, Matar (peas), yogurt, cashew, and Indian spices. It is a perfect recipe for an Indian party menu, weddings, or festive gatherings. And it will not be an exaggeration to say that paneer dishes are one of the most liked vegetarian Indian food across the country.
 
The aromatic flavour of this curry is the best with fresh peas and fresh paneer cubes. If possible, consider making paneer at home. If not, then store-bought will work too.
 
I usually, add paneer cubes into warm water for 20 minutes before adding it into any gravy to keep paneer soft. You can use frozen peas if fresh ones are not available in the current season. Adding a little sugar enhances the taste of any curry. I like to use cashews for smooth, richness and, creamy textures.

Bedmi Poori

Hey, foodie people. How are you coping with self-isolation? Hope all of you are doing well. Well, today I am sharing a perfect wholesome North Indian breakfast. For me, Bedmi Poori is spicy memories of the lazy day that I have spent in Gurugram.

“जायके दिल्ली-मथुरा के” Bedmi poori is a popular North Indian breakfast. Poori made of a spiced dough of Split Black Lentils or Urad Dal. It is a classic breakfast dish from Uttar Pradesh, usually served along with a called Dubki Wale Aloo. To make Bedmi pooris Urad dal soaked and then ground to a smooth paste. Mixed with whole wheat flour, spices, ginger, and chili. Keep aside the dough for 30 minutes. Then rolled and deep-fried to make tasty and slightly crispy pooris.

Bedmi poori is a great breakfast choice for a chilly winter morning or rainy days. These breakfast poories makes your morning scrumptious. It is completely vegan, protein-rich breakfast and a brunch recipe. Every time, when I think about Bedmi poori and Mathura wale dubki aloo, my mouth starts watering by itself.

Crispy, deep-fried, aromatic, spiced Bedmi pooris so delicious and perfect to satisfy your foodie spirit. First time I have tasted these deep-fried addictive pooris in Mathura. After that, I love it ever since. In Gurugram, there is a special place for this yummmylicious breakfast near Sadar Bazar.

I still remember going to Sadar Bazar on those Sunday mornings and eat those Bedmi Pooris and dubki wale aloo. And kachoris in summer as well. One of the flavourful memories of home.

Chana Masala (Spiced Chickpeas Curry)

Hello foodies friends, how are you all doing? Nowadays, traditional healthy Currys from India losing its appeal in comparison to unhealthy fancy junk foods. So, I want to share such a simple and healthy Indian recipe that is easy to cook and tastes best.

This delicious Black Chana Masala is an easy (apart from the soaking the chana overnight) to make. I have made Chickpea curry made with black chickpeas and some nice spices. It burst with lots of flavors, healthy and full of spices for Monday vegetarian dinner recipe. And, I love my spicy chana masala too much.

This is a simple North Indian curry, made in an onion-tomato gravy with ginger and garlic. Kala Chana masala is so easy to prepare and yet so delicious. Kala chana is low in fat & cholesterol, high in dietary fiber and rich protein makes an excellent heart-healthy food choice with established health benefits.

If you are looking for a plant-based rich source of protein and nutritions then this is one of very good vegan and vegetarian curry that you can add into your diet. This curry absolutely lip-smacking, perfectly balanced and nutritional meal. And the best thing is my munchkin loves it and that what makes my day.
