There is always something special about snacks and tea on a rainy evening. I prefer something dry savoury spicy style snack with my tea. So, what about khasta nimki with a hot cuppa of masala tea? Nimki is a crisp snack bursting with the distinct flavour of kalonji (onion seeds) - perfect for any time snacks. Nimki is actually Bengali jar snacks that should be crispy and flaky or khasta in texture. I love making these tringles in rainy season and winter.
Nimki is easy to make with very few ingredients, the nigella seeds are essential that gives the Nimki special flavour. When you bite this flaky savoury pastry you can feel it's lusciousness. These spicy, savoury flaky pastry snacks are rolled and folded with ghee and then deep-fried for perfection. It tastes wonderful with your favourite hot beverage, on a rainy evening. There are always someday snacks in my pantry so that I can just take them out and enjoy with my tea.

In a large bowl add the flour, carom seeds, nigella seeds, chilli flakes, crushed peppercorns, salt and 4 tbsp ghee and mix well. Now rub the flour and ghee with your fingers until it resembles look crumbly.
Now add water slowly and knead into a smooth tight dough. cover and keep it aside for 30 minutes.
After 30 mins knead the dough again for 2 to 3 minutes. Divide it into 20 small lemon sized balls.
Heat oil in a deep frying pan on medium to low heat.
Now roll out a piece of dough ball into a 4-5 inch thin circle and prick it with a fork all over. Then apply a little ghee on the circle and fold it into a triangle. Continue making the nimki with the rest of the dough in the same way.
Fry the nimkis a few at a time in medium to low heat for 8-10 minutes. Drain with a slotted spoon and let it cool.
Once its cooled down store it in an airtight container or enjoy with a cup of tea.
