Stir Fry Garlic Parval

The best and quick parval recipe, you will absolutely love. Preparation of garlicky parval is effortless with very few spices. It makes a perfect side dish to serve with roti and rice or parathas for breakfast and lunch. Parval is also known as pointed gourd and one of my mum's favourite veggies.

Personally, I love to cook and eat parval in many variations but this specific one is my favourite. I usually eat this dry curry with roti and papad. This parval sabji is dry curry but so much flavoursome. A very healthy and homely dish that can be made on an everyday basis.

Can You Make this garlicky Parval Curry in the Air Fryer?
Absolutely yesss. I love to make this parval curry in the air fryer. Using an air fryer for this recipe is easy and uses very little oil. There is a misconception that you cannot make Indian curries in an air fryer. Since this recipe is dry, making it in an air fryer is quite convenient. Just slice pointed gourd or parval into two slices, mix them with the spice mix and air fry them at 380 degrees Fahrenheit for 10-12 minutes.

Ingredients

 500 g Medium sized parval (pointed gourd)
 Mustard oil or normal cooking oil
 1 tbsp Cumin seeds
 ½ tbsp Asafoetida powder
 1 tbsp Turmeric powder
 1 tbsp Kashmiri red chilli powder
 1 tbsp Coriander powder
 ¼ cup Minced garlic
 1 tbsp Lemon juice
 Salt to the taste

Wash and pet dry parval.

Cut each parval into four pieces.

Take a Wok.

Add oil to it. Heat it till it reaches the smoking point.

Add cumin seeds and asafoetida. Let it crackle.

Now add minced garlic and let simmer in the oil for a few mins on low heat.

Add Parval, turmeric powder and salt to it. Add just a little salt at this time. You can adjust the seasoning later.

Cover it and cook till it looks half-cooked. It will take around 6-7 minutes on medium flame.

Stir it once more and then remove the lid and cook on a medium flame for 5 minutes till all the water is dried up.

Cover it for 2-3 minutes more on slow to medium flame.

Remove the lid and add coriander powder, and red chilli powder to it. Stir it and mix it well.

Fry/Sauté on a medium flame for 2-3 minutes till the spices looked cooked and smelled too good.

Pour lemon juice over it.

Serve with hot rotis or poories.

Wash and pet Dry the pointed gourds or Parval.

Slice each Parval into two or three pieces.

Pre Heat air fryer to 380 F.

Mix parval, salt, turmeric powder, minced garlic, coriander powder, Kashmiri red chilli powder, and 1 or2 tbsp of oil.

Add one cup of water into the bottom compartment of the air fryer. We are adding this water to prevent dryness in the parval. If you have difficulty adding water, just skip it. It will still come out delicious.

Place/arrange spice mix Parval halves on the top wire rack of the air fryer.

Air Fry them on 380 F for 8-10 minutes. Turn them in between to roast it from all sides.

Your time can increase or decrease depending on your curry and air fryer.

Sprinkle some Lemon juice on top of it. Enjoy with roti.
