Rose Dry Fruit Kheer

Rose Dry Fruit Kheer - An exquisite dessert recipe to relish during the festive season. It is an easy, quick and simply elegant yet delicious kheer that is made with just a few ingredients such as rose petals, dry fruits, and rice along with milk. I have used date paste that makes this dessert more healthy and addictive.

The use of rose in food is considered as royal and rich by some and is often reserved for special occasions. It is also for temple food they use rose as an offering. Rose petals are a symbol of royalty and delicacy. Roses are known to enhance the aesthetic beauty of anything they associate to and food is not an exception to it.

Rose petals can either be dried and crushed in the recipe or fresh petals are either shredded or directly added to the food. You should be careful while selecting the rose for your food preferably organic rose flower is the best option for food. The rose petals should be cleaned and washed thoroughly in running water to make sure it is devoid of the harmful sprays (insecticides). I have used both fresh and dried rose petals.

When you add date instead of sugar in your dessert that makes your dessert more healthy and delightful that you can eat without any hesitation or guilt. A showstopper of the evening is this Shahi rose and dry-fruit kheer, which has become family favourite.

Ingredients

 1 ½ l Full cream milk
 ¼ cup Almond and Cashew paste
  cup Rice (soaked for 30 mins)
 1 ½ cups Fresh organic edible rose petals
 3 tbsp Cashew and almonds, coarsely crushed
 ½ cup Date paste (you can add sugar instead of date paste)
 ¼ tbsp Green cardamom powder
 For garnish: Fresh organic rose petals

Instructions

In a heavy bottom pan, bring the milk to boil. Simmer on low heat till the milk is reduced to 1/4 of the original quantity.

Add cashew and almond paste and stir.

Add rice and simmer for 15 minutes. Keep stirring continually.

Add crushed rose petals, crushed cashew almond nuts, cardamom powder and cook till the milk reaches the consistency of kheer or reduced half.  Keep stirring intermittently to avoid burning.

Now, finally, add date paste and, simmer for another few minutes till the date paste mix is well.

Take it off the stove and cool it for some time. Chill it for few hours in the refrigerator.

While serving, garnish with rose petals and Enjoy!!
